Big Moments

I didn't know this week was going to be such an important one.... But it was. It was full of big moments. Some were scary, some were celebratory. But overall, it was a not-so-normal week.

It started out same-old same-old....
Kale continued to stick his tongue out. And show off his cute smile.

He chomped on his fingers. And drooled all over his shirt.

Nummy nummy nummy.
He loves to chew on those hands.

Sage played with his Hot Wheels.

The boys set up a super cool extra-long track. Thanks to gravity, and some battery-powered boosters, the cars could go a very long distance!

Kale lounged around in his baby tub.
(Proudly sporting his tie-dye t-shirt.)

Sage joined in on the fun.

They held hands and sang songs.

Then finally, late on Sunday morning, the streak of "new and exciting" moments began...

First, we went to the Fort Collins Museum of Discovery. It had been nearly 6 months since I last went (Sage's birthday to be precise), and the place has changed quite drastically. The museum was bigger and better than ever before!

First we explored the Dome Theater.
This thing was cool! (And a little nauseating...)
The theater was a large dome, as the name implies. 180 degrees of screen. It almost felt like 3D.

Our chairs tilted back so we could see the screen on the ceiling.

We watched a Sesame Street 25-minute video that taught us about the solar system. We even got to hear "Twinkle Twinkle Little Star" in Chinese.

Following the movie, we explored some of the new (and old) features of the museum. The newest wing featured all the things that make Fort Collins distinctly Fort Collins. It captured both the history of our town, as well as its current funky culture. We sure do live in a cool place. I love this city!

Sage enjoyed cutting beets and playing in the make-believe diner.

Kids in the kitchen would serve food to the kids in the front of the restaurant.

And Sage re-visited one of his all-time favorite exhibits, the ball and air station.

Below is Sage on his birthday, 6 months ago, doing the same thing!

Boy has he changed. He was so blond back then.

And fast forward back to the future...

Sage and his daddy built a super fort.

We closed up all the sides, then a tiny voice would tell us to come open up the present. And out popped a Sage!

On Monday I made a new recipe.
I had been on a bit of a cooking hiatus for a couple weeks. I'm now just easing back into it. (Cooking is fun, but exhausting!)

I made black bean enchilada casserole in my slow cooker.
It began by sauteing garlic, onion, spinach, and black beans in a frying pan.

Then I layered flour tortillas, sauce, beans, and cheese - twice over - in the crockpot.

And wallah!

It was good. The flavor was spot on. But the texture needs some working. I found it to be a little on the wet side. Kind of soggy. I might try corn tortillas next time, instead of flour.

But that is not where the big moments ended....
Here are some more.

On March 3rd, my dad (Grandpa Bill) had tummy surgery to correct an obstruction somewhere along his intestinal track. I watched my phone all day long waiting for text updates from my mom. By the end of the day, I received news that the surgery went well. Dad was awake and his vitals were strong. Although they strangely found nothing to unblock. He's still in the hospital, but should be released tomorrow.

On March 4th, Sage went the entire day in undies. With no diaper, and no accidents!!! Potty training is nearly complete. We are so close!!

On March 4th, Matt signed his 30-year term life insurance policy. Woo hoo! Feels so good to have that looming to-do item finally checked off the list. I'll be signing my own policy soon. Matt took his health exam before I did. I'm about two weeks behind him. But soon we will both be covered, and then we can really start living dangerously! ;)

Also on March 4th, my brother called with some great news!! Uncle Sam is moving to Fort Collins! I'm in total shock. I'm so excited to have family living in town. His first day at his new FedEx office is April 7th. Which is just weeks away. As I told Sam on the phone, this is a game changer. Life will be very different for all of us going forward...and in a really positive way. My boys will get to know their uncle very well. Our holiday dinner tables will always include a couple extra chairs. And I will finally get some free babysitting!!
